In the Ottoman palace kitchens, sumac was more than a spice — it was prized for its tart elegance, used to awaken rich meats and fresh fish alike. Melon, too, wasn’t just a fruit — it was often pickled in rosewater and vinegar, served cold to cleanse the palate between courses during imperial feasts.

Sucuk, with its deep, spiced aroma, was a royal indulgence — grilled, simmered, or ground into sauces for meat and grain dishes.

This dish brings them together:
Sumac-cured kingfish, pickled melon, and a bold sucuk sauce — a modern echo of Ottoman flavours, reimagined on your plate.

Turkish coffee became part of palace rituals, especially in the Topkapı Palace, where it was prepared by a specialized servant called the kahvecibaşı (chief coffee maker).

Serving coffee was an art, accompanied by ornate cups (fincan), trays, and sometimes sweets like Turkish delight.
